Corn Relish
Originally handed down from Hazel Beaty.
Ingredients
- 12 Ears of sweet corn
- 12 Onions
- 12 Sweet pepper, green and red 3-4 hot (optional spicy)
- 1 Heads of cabbage
- 2 Tbsp Salt
- 3 Cups Sugar
- 1 Pint Yellow mustard
- 1 Qt White vinegar
Instructions
- Cut corn from cobs. Dice onions and peppers. Chop cabbage into small pieces.
- Cook corn and vinegar for 20 minutes.
- Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer for 20 minutes.
- Pack hot relish into hot jars, leaving ¼ inch headspace.
- Process 15 minutes in boiling water canner. Add 10 minutes to processing time at 5000 feet elevation.
