Corn Relish

 

Corn Relish

Originally handed down from Hazel Beaty.
Course Condiment
Cook Time 40 minutes

Ingredients

  • 12 Ears of sweet corn
  • 12 Onions
  • 12 Sweet pepper, green and red 3-4 hot (optional spicy)
  • 1 Heads of cabbage
  • 2 Tbsp Salt
  • 3 Cups Sugar
  • 1 Pint Yellow mustard
  • 1 Qt White vinegar

Instructions

  • Cut corn from cobs. Dice onions and peppers. Chop cabbage into small pieces.
  • Cook corn and vinegar for 20 minutes.
  • Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer for 20 minutes.
  • Pack hot relish into hot jars, leaving ¼ inch headspace.
  • Process 15 minutes in boiling water canner. Add 10 minutes to processing time at 5000 feet elevation.
