Captain D's Fish Batter

Ingredients

  • 1 1/2 cups All-purpose flour
  • 1/2 cup Cornstarch
  • 1 tbsp Baking powder
  • 2 tsp Kosher salt
  • 1/2 tsp Cayenne
  • 1 1/2 cups Water

Instructions

  • Mix dry ingredients first then slowly mix in water.

Notes

  • Captain D's uses pollock fish but any white fish can be used and must be thawed and padded dry before batter dipping.
  • This batter will coat about 2lbs of pollock.
  • Heat oil to 350°-370° for deep frying.
