Chicken Salad Chick - Classic Carol

Made famous by Chicken Salad Chick. The Classic Carol is the base for most all of the other salads. See the notes for additional recipes.

Ingredients

  • 1 ½ lbs chicken raw
  • ½ cup Duke's mayonnaise
  • 2 tbsp celery finely minced
  • 2 tsp dry Ranch salad dressing
  • ½ tsp salt omit if too salty from dressing mix
  • ½ tsp black pepper
  • 1-2 tbsp green bell pepper finely minced (optional)

Instructions

  • Steam chicken in a steamer per the directions or, cook the chicken in a pot of water. Once cooked thru, remove from water/steamer.
  • Shred chicken, the chicken can be shredded with a stand mixer by using a paddle attachment.  Or you can shred the chicken tenders with two forks.
  • In a medium sized bowl add celery, mayonnaise, dry Ranch dressing mix, salt and black pepper.  Stir until well blended. 
  • Add shredded chicken and mix in well. Store chicken salad in an air tight container.

Notes

The chicken salad tastes better if prepared a couple of hours before it is consumed.
Says fresh in an airtight container for 4 days after preparation.
Sassy Scotty: 1/2 cup shredded cheddar cheese, 5 strips of cooked bacon crumbled, 3 tbsp green onions, 2 tbsp sour cream. 
Fancy Nancy: 3/4 cup mayo, 3/4 cup red seedless grapes, 1/2-3/4 cup Fuji apple and 1/2 cup chopped pecans. Mix in the grapes last as you don't want them crushed too much.
Kickin' Kay Lynne: 5 tbsp Buffalo sauce, 2 tbsp Ken's ranch, 5 strips of cooked bacon crumbled, 1/2 cup shredded cheddar cheese, 2 tsp Sriracha sauce, and 2 tbsp chopped jalapeño.
Buffalo Barclay: Omit ranch seasoning. Add 5 tbsp of Buffalo Wing Sauce, and 5 tbsp of sour cream.
