Long John Silver's Fish/Chicken Batter

Ingredients

  • 2 cups Flour
  • 1/4 cup Corn starch
  • 2 tsp Salt
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Onion salt
  • 1/2 tsp Paprika
  • 1/4 tsp Pepper
  • 16 oz 7-UP

Instructions

  • Make the batter by combining flour, corn starch, sugar, salt, baking powder, baking soda, onion salt, paprika, ground black pepper. Stir to combine all dry ingredients. Add 7-UP to dry ingredients. The batter will foam, continue to stir.

Notes

  • The batter will do 2lbs of fish or chicken tenders.
  • The fish used is a white fish and should be thawed.
  • Chicken tenders should be frozen when batter dipped.
  • Chicken is done cooking when it begins to float.
  • To fry the fish or chicken make sure the oil is between 360°-375°.
