Long John Silver's Fish/Chicken Batter

Ingredients
- 2 cups Flour
- 1/4 cup Corn starch
- 2 tsp Salt
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 tsp Onion salt
- 1/2 tsp Paprika
- 1/4 tsp Pepper
- 16 oz 7-UP
Instructions
- Make the batter by combining flour, corn starch, sugar, salt, baking powder, baking soda, onion salt, paprika, ground black pepper. Stir to combine all dry ingredients. Add 7-UP to dry ingredients. The batter will foam, continue to stir.
Notes
- The batter will do 2lbs of fish or chicken tenders.
- The fish used is a white fish and should be thawed.
- Chicken tenders should be frozen when batter dipped.
- Chicken is done cooking when it begins to float.
- To fry the fish or chicken make sure the oil is between 360°-375°.
