Easy Peanut Brittle

This is the microwaved version.

Ingredients

  • 1 cup Domino sugar
  • ½ cup light corn syrup
  • 1 ½ cups unsalted roasted peanuts
  • ¼ tsp salt
  • 1 tbsp butter
  • 1 tsp vanilla
  • 1 tsp baking soda

Instructions

  • Spray a microwave safe 2-quart (8 cup) bowl & 1-2 cup measuring cup with non-stick spray.
  • In the bowl, mix the sugar and corn syrup together (use the sprayed measuring cup for the corn syrup). Microwave on high for 4 minutes.
  • Stir in peanuts and salt, microwave again on high power 3 ½ minutes.
  • Mix in butter and vanilla extract, stirring until butter is melted. Microwave on high power 1 ½ minutes. (See notes)

Turning out the brittle:

  • On warm surface covered with aluminum foil (oven), spray the aluminum foil with non-stick spray. (A warmed surface could be a baking sheet sat on top of a hot/warmed oven.)
  • Stir in baking soda (mixture will become fluffy and foamy). Pour out and lightly spread out onto prepared aluminum foil.
  • You may now move the aluminum foil to a cool surface after it’s been spread out. Allow to cool. Break into bite sized pieces.

Notes

  • Cook times may vary slightly depending on microwave wattage. Watch for a golden brown color near the end. Newer higher wattage microwave ovens may need about 30 seconds or so cut from the time. 
  • Note that the less you spread the lighter the brittle will be, or more air bubbles it will have, so if you prefer it like so then do as little spreading as possible. If you prefer it flatter then spread it out thin.
