Jalapeño Popper-Stuffed Meatloaf

Ingredients

Beef Mixture

  • 1 lb ground beef
  • cup oatmeal
  • 2 ea eggs whisked
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 16 oz cream cheese 2 blocks (8oz/per)
  • 1 tsp salt
  • ½ tsp pepper

Stuffing

  • 1 cup cheddar cheese shredded
  • 3 ea jalapeño
  • 1 tsp garlic powder

Wrap

  • 1 pck bacon
  • 1 ea BBQ sauce

Instructions

  • Preheat oven to 350°
  • Mix the beef mixture well.
  • On a plastic-wrap-lined cookie sheet, flatten out the beef mixture.
  • Mix the stuffing mix well and spread over the beef mixture evenly.
  • Beginning at one end of the sheet, begin rolling the meat over on itself to create a roll. Use the plastic wrap to help roll.
  • Wrap the roll in the bacon.
  • Place the bacon-wrapped roll on a broiler pan. Smother the roll with BBQ sauce.
  • Bake the roll until meat is done, about 45 minutes.
