Jalapeño Popper-Stuffed Meatloaf
Ingredients
Beef Mixture
- 1 lb ground beef
- ⅔ cup oatmeal
- 2 ea eggs whisked
- 1 tbsp dried parsley
- 1 tsp salt
- 1 tsp pepper
- 16 oz cream cheese 2 blocks (8oz/per)
- 1 tsp salt
- ½ tsp pepper
Stuffing
- 1 cup cheddar cheese shredded
- 3 ea jalapeño
- 1 tsp garlic powder
Wrap
- 1 pck bacon
- 1 ea BBQ sauce
Instructions
- Preheat oven to 350°
- Mix the beef mixture well.
- On a plastic-wrap-lined cookie sheet, flatten out the beef mixture.
- Mix the stuffing mix well and spread over the beef mixture evenly.
- Beginning at one end of the sheet, begin rolling the meat over on itself to create a roll. Use the plastic wrap to help roll.
- Wrap the roll in the bacon.
- Place the bacon-wrapped roll on a broiler pan. Smother the roll with BBQ sauce.
- Bake the roll until meat is done, about 45 minutes.
